It all started in anatomy class when I became awed, and still am, with the complexity and sophistication of the human body and what its extraordinary capabilities are. Until then, I had taken my abilities to see, hear, speak, run, move and sleep, yes sleep, for granted. But then, it suddenly dawned on me that I was like a well-oiled machine or many little machines running in perfect unison, only much more intricate and functionally fascinating. Muscles, nerves, bones and organ systems work harmoniously with each other and know exactly what to do at any given time.
As if this weren’t enough, this incredible work of art is also nourished and oxygenated by a river of blood that removes cellular waste and toxins as well. Truly amazing!
I saw so much intelligence at work; I wondered if its IQ could be measured.
More surprises ahead!
This still was not the end of my wonderment though. Physiology blew me away, in particular enzymes. Every organ, tissue and all 100 trillion cells in our body depend on enzymes. Without enzymes nothing in the body can work. Enzymes are catalysts responsible for every chemical reaction. Enzymes are also specific. Each enzyme takes care of only one type of action. There are trillions of enzymes at work continuously to produce energy, to keep the heart beating, to break down proteins and to help digest the food we eat.
However, there is one particular enzyme that put me in a trance just thinking about it. This enzyme is DNA polymerase One. The job of this enzyme is to correct mistakes in the DNA double helix, or rather, to clean up the mess when things get knocked about in a busy cell. It removes the damaged base molecule and inserts the correct one by using the opposite side of the DNA as an example. DNA polymerase One checks about ten bases in a second. This is slow for an enzymatic action. However, let me tell you the other remarkable feat of this remarkable little enzyme. This enzyme not only repairs the DNA, it also checks if the job was performed without a mistake. It not only checks once, it checks it twice. If this is not called superior intelligence, then I don’t know what is.

My science classes instilled in me great respect for my body and, for that matter, all living things. It made me realize that one cannot arbitrarily put any kind of food into this vehicle of complexity to keep it in perfect working order. It always only deserves the very best! One has to keep in mind that the human body evolved over millions of years. It developed on food found in the wild, not at fast food restaurants. It has not changed in all the millennia. It still needs the same natural foods that cells can recognize as nourishment. Today’s food lacks nutrients. The wonderful human machine cannot thrive on empty calories. Whatever meager nutrients these so-called foods supply they are foreign to the human body and difficult to digest and assimilate. If they cannot be assimilated they cannot rebuild, repair or renew.
Therefore, it is absolutely imperative that we return to the old way of eating. Only then can we preserve our body’s innate wisdom. We have to keep foremost in mind that when we eat, we nourish the body’s IQ; we don’t merely still hunger and satisfy cravings. We must provide only superior nourishment so it can continue to perform its remarkable feat of keeping us healthy, joyful and alive.
